All-Time Favorite – Macadamia Nut Pancakes Recipe

If you’ve ever been to the Hawaiian Islands (Oahu, Maui, Kauai, etc.) or any other Pacific island, then you’ve probably had a chance to sample Macadamia nut pancakes. I’ve searched far and wide for a good macadamia nut pancake recipe and have finally come up with one that suits my liking… I think this might even make Jack Johnson switch from banana pancakes.
Serving Size: 3
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Ingredients
1/2 cup macadamia nuts (chopped)
1 teaspoon vanilla extract
2 eggs
3 tablespoons butter (Unsalted) (melted)
1 1/2 cups buttermilk
1/4 teaspoon Salt
1/2 teaspoon Baking soda
1 1/2 teaspoons baking powder
3 tablespoons sugar
1 1/2 cups all-purpose flour
1/2 cup maple syrup
Directions
- In a mixing bowl combine the flour, sugar, baking powder, baking soda, and salt. Mix thoroughly.
- In a separate bowl, combine the buttermilk, butter, eggs, and vanilla extract. Mix well.
- Combine the dry and wet mixtures till you get a lumpy batter.
- Heat a non stick frying pan or griddle over low heat.
- Depending on the size of the pancake you like pour a portion of the batter into the non-stick frying pan or griddle.
- Sprinkle some of the chopped macadamia nuts onto the pancake.
- Once the sides of the pancake begins to harden and bubbles start to appear on the top of the pancake flip it over.
- Cook for another minute or two and remove.
Notes
Maple syrup works on these, but if you want that real island taste and feel, cover these things in coconut syrup. So delicious!

I tried this one when I was in Maui… Reading about it brough all the memories back from that fantastic trip (girl meets boy, boy marries girl…). We were both in vacation, so we have not gone back in 4 years. I will need to go back there some time (hopefully soon). Thanks for the recipe.
This looks so good, I am going to try it this weekend. Since I have never been to Hawaii, maybe it will bring a little bit of Hawaii to me
